need simple ipad dashboard for taxidermy shop (track freezer tags & tanning)

I run a one-man taxidermy shop and I am drowning in paper tags and spreadsheet tabs. Right now I track customer drop-offs, freezer locations, and cape shipments to the tannery across two Google Sheets and a paper binder. Bow hunting season opens in three weeks and I usually take in 75+ whitetail capes in under two months. I need a clean single screen dashboard on my workbench iPad so I stop losing track of tanning turnaround times.

I have never hired a freelancer before, so please bear with me.

Things I need built:

• Clean overview dashboard showing mount stages (in chest freezer, out at tannery, on form, ready for pickup)
• Automatic red flag when an order sits past 180 days without a customer update
• Simple overdue alert for tannery return shipments
• 15-minute walkthrough or video showing me how to keep it working

All raw data is currently in Google Sheets. Need this finished before September 15th before drop-offs start.
