Need help fixing my messed up shopify ga4 tracking for boot repair shop

Hi everyone, I run a small boot repair and resole shop out of Spokane. It is just me at the bench and an apprentice helping with prep. Right now we handle local walk-ins on Square and all our mail-in resole packages through Shopify.
I have been trying to make sense of our website analytics for months and I am completely lost. I tried setting up Google Analytics 4 and Google Tag Manager myself back in March by watching YouTube tutorials on my lunch break, but it is a total mess. It is tracking double pageviews, recording zero checkout conversions, and I cannot figure out where people are dropping off when they customize their Vibram sole choices on our product page.
I also tried setting up Plausible last month hoping it would be easier, but now neither tool gives me accurate numbers. I think my tags are firing twice and Shopify checkout is masking the actual traffic sources.
I have never hired on here before so please bear with me if I do not know all the right terminology. Our busy boot repair season kicks off in October with the fall rains coming, and I need this working beforehand so I know if our Instagram ads are actually bringing in paying mail-in customers.
I just want clean, reliable analytics where I can see where people come from, what they click, and where they bounce. Need someone who can untangle my setup and explain it simply.
